Salvage BBQ, located on Congress Street in a refurbished post office building, specializing in two things: Texas brisket and North Carolina chopped pork. Smoked briskets, poultry, sausages, and St. Louis ribs are slow-cooked over Maine’s own red oak. The pig butts are accompanied by a spicy vinegar sauce. Extra vinegar sauce and a light tomato-based sauce are offered for people who prefer their food spicy and saucy. They have a selection of locally manufactured drinks.

Chaps Pit Beef does not disappoint in this area, serving bottom round beef roasted over charcoal, which is cut into thin slices with a slicer and served freshly smoked with charcoal at the diner’s preferred temperature.
